AUTHENTIC SOUL, EARTHLY DELIGHT
Colour
Dark black olive in colour with blood red and slightly purple hues.
Aroma
The nose displays wonderfully lifted aromas of stewed black fruits of blackberry and boysenberry. This is supported by nuances of mint, eucalyptus and lavender. There are also hints of tobacco and cedar.
Palate
The palate is full bodied, ripe, savoury, complex and dry. The upfront fruit flavours are of overly ripe fruits of the forest. The mid palate is complex with flavours of fresh basil, sarsaparilla, liquorice and dark bitter chocolate. The back palate is dry and firm with a long yet elegant intensity.
Food pairing
Seared then oven roasted lamb backstrap with a red wine jus and garlic mash, Pan fried venison fillet with a blackberry sauce and roasted beetroot, Hard aged cheeses.
