Colour
Vibrant ruby red in colour with magenta and crimson hues.
Aroma
The nose displays lifted aromas of stewed red fruits of raspberry and sour cherry. This is supported by a slight smokiness and aromas of freshly turned earth. There are also hints of black pepper and star anise.
Palate
The palate is mid weight, soft and elegant yet wonderfully complex. The palate shows upfront fruit flavours of blood plum and cranberry. The mid palate is multi layered with complexities of five spice, game, dried mixed herbs and cherry cola. The back palate is long, soft and dry with a natural cleansing acidity.
Food pairing
Slow cooked pork belly cooked in an Asian mastersock with wilted greens, Veal saltimbocca, Wild field mushroom risotto with shaved parmesan.

This wine was sourced from a seventy-year-old Shiraz vineyard in the heart of the Hunter Valley grown on volcanic clay soils at the foothills of the Brokenback range. The wine is mid-weight, elegant and gentle with great length and personality. I believe that this wine will live for many years and evolve into a true Hunter classic dry red.”
